The most photographed among Philippine fiestas is the PAHIYAS festival in Lucban, Quezon, where houses are decorated with multi-coloured kiping or rice paper. The fiesta falls on August 19, the feast of San Luis Obispo. Payas is hiyas meaning jewel to create PAHIYAS. 
Kiping is created from rice paste that has food colouring added to give the decorations their vibrant appearance. The kiping is but a background for displaying the best and largest agricultural produce. Vegetable and fruits are arranged along with the kiping to form designs or even text. Fish, shrimp and even pets are integral parts of the house decorations. 
PAHIYAS is a cross between a harvest and fertility ritual; it is a way for humans to thank Nature for its bounty in a colourful and spectacular fashion.
PAHIYAS PROJECT  As a As a Filipino artist now living in Australia my intention is to transform the PAHIYAS into a different context by using recycled plastic drink bottles to celebrate the cycle of consumerism and to intergrate this cross cultural practice to the Australian community.Accompanying Artists Siobhan Briggs Alexander Hayes |

An evening of dance from the Republica Dominicana featuring the amazing Fantasia Latina dance ensemble choreographed by Luis Moreno. Come and merengue the night away with LACA. Fantasia Latina's performance will be followed by authentic recorded Latin music presented DJ Juan Carlos. Traditional El Salvadorian papusas will be available. Join the Cuban community in a celebration of Caribbean culture as part of Fiesta Kultura pena series. From 8.00 - 8.30 you can learn the hip swivelling dances of salsa, tango, cha cha and merengue modelled by dancers from the Tango Salon. Fuel up on authentic papusas and empanadas and try the Cuban cocktail "mojito's" made with genuine Cuban Habana Rum. Then dance the night away to live Cuban music featuring Malembe.
